“Not Your Father’s Root Beer” Bread

Ingredients

  • 6 c all purpose flour
  • 6 Tbsp baking powder
  • 2 tsp salt
  • 1/2 c sugar
  • 1 c quick oats
  • 2 bottles Not Your Father's Root Beer room temperature
  • 2 tsp vanilla
  • 1/2 c brown sugar
  • 1 stick butter melted

Instructions

  1. Preheat oven to 350.

  2. Sift first four ingredients into large mixing bowl and then stir in oats. Add two bottles of "Not Your Father's Root Beer" and vanilla & brown sugar. Mix well.

  3. Pour bread batter into two, well greased loaf pans. Then pour half of melted butter over the top of batter in each pan. Bake for 50-60 minutes until toothpick comes out clean in the middle.

Recipe Notes

Sifting the dry ingredients will give you a lighter bread.  It is important that your “root beer” is room temperature so leave out of the fridge in advance.  I have used pan spray to grease loaf pans, but if you want to make sure that your loaves come out of the pan with ease.  Grease your pan and then cut a piece of parchment paper to fit bottom of loaf pan for extra insurance. If not eaten immediately, the bread should be kept in the refrigerator.  Although it’s best warm out of the oven, a cold slice with a cup of coffee in the morning certainly isn’t bad.
