A little twist on Tuna..

So, tuna patties…tuna cakes.. we’ve all had them. In my family, it’s always been somewhat of a “go to” meal that was quick and didn’t require many ingredients. This recipe is both quick, and has few ingredients….but there’s something about adding capers and spice, that makes it just a little different. Enjoy!

(Note: recipe can easily be doubled or tripled to feed a crowd, and can be used as an appetizer by making smaller cakes.)

Spicy Tuna Cakes

Ingredients

  • 2 Tbsp Canola Oil
  • 1 egg
  • 1 can tuna in water drained
  • 1 tsp capers drained
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp dried parsley
  • 1/2 tsp ground black pepper
  • 1 pinch salt
  • 1 cup crushed saltines or oyster crackers

Instructions

  1. Preheat skillet on medium. Add canola oil. While your pan is warming up, in a small bowl whisk one egg. Drain the tuna and capers and add to beaten egg.

  2. Stir in the crushed red pepper, parsley, and s & p. Gradually add crushed crackers to mix with your hands. Divide and form two equal size patties. Mixture should shape into patties easily, but remain moist. Place each in hot skillet.

  3. Sear until golden on each side. Approximately 4-5 minutes per side. Remove from skillet and place on paper towels to remove any excess oil.

    Serve with lemon wedges and tarter sauce.
