So, everyone has their own way of making chicken salad, and truthfully there is no wrong way to make it. I tend to make mine a little different every time, either based on mood or ingredients that I have on hand. I tend to not like pickles in my chicken salad, but I do like a bit of dill flavor, hence the capers in this recipe. I used carrots, cucumbers, and red onion for crunch and color, as well as to get my veggies in! lol As usual, with any of my recipes, please feel free to change it up based on your preferences!

Super Easy Chicken Salad
Ingredients
- 1 12.5 oz can chicken breast drained
- 1/3 cup diced cucumber
- 1/3 cup diced carrot
- 1/4 cup diced red onion
- 1 tsp capers
- 1/2 cup real mayonnaise
- 1 tsp parsley flakes dried
- 1/2 tsp cayenne pepper omit if desired
- 1/2 tsp paprika
- 1/2 tsp salt to taste
- 1/2 tsp coarse black pepper to taste

In medium size bowl, add drained chicken. Using a fork, separate chicken. Finely chop veggies and mix into chicken. Add the rest of the ingredients and mix well. Cover and refrigerate for at least an hour. This time lets the flavors really come together.

I served this as a stuffing for vine ripened roma tomatoes (shown in picture). But this could easily be served on bread, pitas, or just with crackers.
